Serves 10 guests

Ingredients for the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Directions

Making the Syrup: Put all the ingredients in a pan, bring to a light boil, agitating so the sugar melts. Then, take off the stove allowing it to cool completely. Transfer to a sealable bottle, cap it and refrigerate it chilled, it will last for up to one month.

For the Premix: Pour the specified spirits and syrup into one sizeable container, let it rest for one hour, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

When ready to serve: Measure 85ml of your cocktail base to a mixing glass containing ice, and agitate gently for a minute to chill. Filter into a cold coupe glass or equivalent, garnish with the cranberries and complete it by giving it a light spray of the essential oil above the glass.
